Ingredients (makes about 2 cups)
- 2 cups fresh or frozen apricots, pitted and chopped
- 1 cup diced mango (fresh or frozen)
- 3/4 cup granulated sugar
- 2 tbsp lemon juice
- 1 sachet Nano Turmeric
Instructions
- Macerate. Combine the apricots, mango, sugar, and lemon juice in a saucepan and let sit 10 minutes, until the fruit releases its juices.
- Cook. Bring to a simmer over medium heat and cook, stirring often and mashing the fruit, until thick and glossy, about 20–25 minutes.
- Test the set. Drop a little jam on a chilled plate; if it wrinkles when nudged, it's ready.
- Add the Nano Turmeric. Take the pan off the heat and stir in the Nano Turmeric — adding it off the heat keeps the mango flavor and curcumin bright.
- Jar. Cool, then transfer to jars.
