Matcha Shortbread Cookies

Matcha Shortbread Cookies

Buttery, melt-in-your-mouth shortbread with a smooth matcha flavor and a pretty green hue, made with NeuroMatcha — our mushroom matcha drink mix formulated to support calm, focused energy. Six ingredients, one bowl, and a slice-and-bake log means you can keep dough in the fridge and bake a batch whenever the craving hits. NeuroMatcha's instant, clump-free mix stirs right into the dough.

Why this recipe works

Shortbread is all about butter — and its rich, tender crumb is the perfect backdrop for matcha's smooth, low-bitterness flavor. NeuroMatcha colors the dough a soft green and adds its focus-supporting blend of matcha, functional mushrooms, and Alpha GPC, turning a classic cookie into something a little more functional.

Ingredients (makes about 24 cookies)

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup powdered sugar
  • 2 tablespoons NeuroMatcha
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt

Instructions

  1. Cream the butter. Beat the softened butter and powdered sugar until creamy.
  2. Add the matcha. Beat in the NeuroMatcha and vanilla until the dough is evenly green.
  3. Make the dough. Add the flour and salt and mix just until a dough forms.
  4. Chill. Roll into a log about 2 inches wide, wrap, and chill 30 minutes.
  5. Slice. Cut into 1/4-inch rounds and arrange on a lined baking sheet.
  6. Bake. Bake at 325°F for 12–15 minutes, until set but still pale — don't let them brown, which keeps the color and flavor.
  7. Cool. Let cool on the pan.

Tips & variations

  • Sparkly edges: Roll the log in granulated sugar before slicing.
  • Dress them up: Drizzle with melted white chocolate once cooled.
  • Make ahead: The dough log freezes beautifully — slice and bake straight from frozen (add a minute or two).
  • Don't overbake: Pale is perfect; browning dulls the matcha color and flavor.

The OurJrney difference

NeuroMatcha is built for people who want to stay sharp and calm at the same time. Baking it into shortbread is a cozy way to enjoy it — you get the clean matcha flavor and its focus-supporting blend, in a buttery cookie that keeps beautifully.
