Ingredients (makes 4)

  • 2 cups heavy cream
  • 2 tablespoons NeuroMatcha mushroom matcha drink mix
  • 5 large egg yolks
  • 1/3 cup granulated sugar (plus more for the topping)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Warm the cream. Heat the oven to 325°F. Warm the cream until steaming (not boiling), then whisk in the NeuroMatcha until dissolved.
  2. Whisk the yolks. Whisk the egg yolks, sugar, and salt until pale.
  3. Temper. Slowly whisk the warm matcha cream into the yolks, then whisk in the vanilla and strain the mixture.
  4. Water bath. Divide among 4 ramekins set in a baking dish and pour hot water halfway up the sides.
  5. Bake. Bake 30–35 minutes, until set with a slight jiggle in the center. Chill at least 2 hours.
  6. Brûlée. Before serving, sprinkle a thin, even layer of sugar on top and torch (or broil) until caramelized.

Tips & variations

  • Water bath matters: It keeps the custard silky and prevents curdling.
  • Don't overbake: A slight center jiggle means it will set perfectly as it chills.
  • Torch last: Caramelize just before serving so the top stays crisp.
  • Make ahead: The custards keep 2–3 days chilled; add the sugar crust at the last minute.
