Matcha bagels

- 1 egg, beaten (for egg wash)
- Optional: sesame seeds or everything-bagel seasoning
No self-rising flour? Use 1 cup all-purpose + 1 1/2 tsp baking powder + 1/4 tsp salt.
Sautéed mushroom topping
- 8 oz cremini or button mushrooms, sliced
- 1 tbsp butter
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1/2 tsp fresh thyme (or 1/4 tsp dried)
- Salt and pepper, to taste
- 4 oz cream cheese, for spreading
- To garnish: chopped parsley, chili flakes
Instructions
- Make the dough. Heat the oven to 375°F and line a baking sheet. Whisk the self-rising flour and NeuroMatcha together, add the Greek yogurt, then mix and knead 2–3 minutes into a smooth, slightly tacky dough (add a little flour if too sticky).
- Shape. Divide into 4 pieces, roll each into a rope, and pinch the ends into a ring. Brush with egg wash and add seeds if using.
- Bake. Bake 22–25 minutes, until golden and cooked through. Cool slightly.
- Sauté the mushrooms. Heat the butter and olive oil in a skillet over medium-high. Add the mushrooms in a single layer and cook undisturbed 3–4 minutes, then stir and cook until golden, 6–8 minutes total.
- Season. Add the garlic and thyme; cook 1 minute more. Season with salt and pepper (a splash of soy sauce deepens the umami, if you like).
- Assemble. Slice the bagels, spread with cream cheese, pile on the mushrooms, and finish with parsley and chili flakes.
