All the magic of a bakery almond croissant — flaky, buttery, filled with sweet almond cream — with a matcha twist and an easy shortcut. This version starts with store-bought croissants, so there's no laminating dough from scratch. Ingredients (makes 6)

  • 6 croissants (day-old works best)

Matcha almond cream

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup almond flour
  • 1 large egg
  • 1 tablespoon NeuroMatcha
  • 1/2 tsp almond extract

Simple syrup

  • 1/4 cup water
  • 1/4 cup sugar

To finish

  • Sliced almonds
  • Powdered sugar

Instructions

  1. Heat and prep. Heat the oven to 350°F. Make the simple syrup: warm the water and sugar until the sugar dissolves, then let cool.
  2. Make the matcha almond cream. Beat the butter and sugar, then mix in the almond flour, egg, NeuroMatcha, and almond extract until smooth and green.
  3. Soak. Slice each croissant in half horizontally and brush the cut sides with simple syrup.
  4. Fill. Spread almond cream on the bottom halves, close them, and spread a thin layer over the tops.
  5. Top. Sprinkle with sliced almonds.
  6. Bake. Bake 18–22 minutes, until golden. Cool slightly, then dust with powdered sugar.
