Matcha Strawberry Pudding

Cups of green NeuroMatcha strawberry pudding topped with fresh diced strawberries

Creamy, silky matcha pudding layered with juicy macerated strawberries — a make-ahead dessert built on NeuroMatcha, our mushroom matcha drink mix formulated to support calm, focused energy. Because NeuroMatcha dissolves instantly, it whisks straight into a classic stovetop pudding: no clumps, no sifting, no special equipment. It's the kind of light, feel-good treat you can make the night before and pull from the fridge whenever a craving hits.

Why this recipe works

A simple cornstarch-and-milk pudding gives you that nostalgic, spoonable texture without eggs or a double boiler. NeuroMatcha stirs in smoothly for a vibrant green color and a smooth, low-bitterness matcha flavor, while functional mushrooms and Alpha GPC add a functional twist to dessert. Bright, macerated strawberries cut the richness and make it feel fresh.

Ingredients (makes 4 servings — four 6 fl oz cups)

Strawberry layer

  • 1 cup fresh strawberries, diced
  • 1 tbsp honey (or sugar)
  • 1 tsp lemon juice

Matcha pudding

  • 2 cups whole milk (or oat milk)
  • 3 tbsp cornstarch
  • 1/4 cup sugar (or 3 tbsp maple syrup)
  • 2 tablespoons (2 servings) NeuroMatcha mushroom matcha drink mix
  • 1/2 tsp vanilla extract
  • 1/8 tsp salt

Instructions

  1. Macerate the berries. Toss the diced strawberries with the honey and lemon juice. Set aside for 10–15 minutes while you make the pudding, so they release a light syrup.
  2. Make a slurry. In a small bowl, whisk the cornstarch, sugar, and salt with about 1/2 cup of the milk until completely smooth.
  3. Cook the base. Heat the remaining 1½ cups milk in a saucepan over medium until steaming (do not boil). Whisk in the slurry and cook, stirring constantly, for 3–4 minutes, until thick enough to coat the back of a spoon.
  4. Add the NeuroMatcha. Take the pan off the heat and whisk in the NeuroMatcha and vanilla until smooth and vibrant green — it dissolves instantly, no sifting needed.
  5. Chill. Divide the pudding among 4 cups. Press a piece of plastic wrap directly onto the surface (this prevents a skin) and chill for at least 2 hours, until set.
  6. Serve. Top each cup with the macerated strawberries and their syrup.

Tips & variations

  • Make it vegan: Use oat or coconut milk and maple syrup in place of honey.
  • Parfait style: Layer half the pudding, a spoon of strawberries, then more pudding for a pretty striped cup.
  • Make ahead: Keeps 3 days covered in the fridge — ideal for meal-prep desserts.
  • Best timing: Light and lower in caffeine per serving than a full latte, but still best enjoyed earlier in the day.
