- 4 oz white chocolate, chopped
- 1/4 cup (1/2 stick) unsalted butter
- 3 large eggs, separated
- 1/4 cup granulated sugar (divided)
- 2 tablespoons NeuroMatcha
- 1/4 cup all-purpose flour
- 2 tbsp heavy cream
- Pinch of salt
- Powdered sugar, to dust
Instructions
- Prep. Heat the oven to 340°F and line a 6-inch round pan with parchment.
- Melt. Melt the white chocolate and butter together until smooth, then whisk in the heavy cream.
- Yolks. Whisk the egg yolks with half the sugar until pale, then stir into the chocolate mixture. Sift in the NeuroMatcha, flour, and salt and mix until smooth.
- Meringue. In a clean bowl, whip the egg whites with the remaining sugar to soft-medium peaks.
- Fold. Gently fold the meringue into the batter in two or three additions, keeping it airy.
- Bake. Pour into the pan and bake 25–30 minutes, until just set with a slight jiggle in the center.
- Cool. Cool in the pan (it will sink slightly — that's normal) and dust with powdered sugar or a little matcha.
