Ingredients (makes about 24 sandwiched macarons)

Shells

  • 1 cup (100g) almond flour
  • 1 3/4 cups (175g) powdered sugar

  • 1/4 cup (50g) granulated sugar
  • 1/4 tsp cream of tartar

Lavender buttercream

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1/2 tsp culinary (food-grade) lavender, finely ground — or 1/4 tsp lavender extract
  • 1 tbsp milk or cream

Instructions

  1. Sift. Sift the almond flour, powdered sugar, and NeuroMatcha together twice.
  2. Make the meringue. Whip the egg whites with cream of tartar to soft peaks, then add the granulated sugar gradually, whipping to stiff, glossy peaks.
  3. Macaronage. Fold the dry mix into the meringue just until the batter falls in a slow ribbon — stop before it gets runny.
  4. Pipe. Pipe 1.5-inch rounds onto parchment or a silicone mat, then rap the tray firmly on the counter to release air bubbles.
  5. Rest. Let the shells sit 30–60 minutes, until a dry skin forms and the tops aren't tacky.
  6. Bake. Bake at 300°F for 15–18 minutes. Cool completely before lifting.
  7. Fill. Beat the butter, then add the powdered sugar, ground lavender, and milk; whip until fluffy. Pipe onto half the shells and sandwich with the rest.
  8. Mature. Refrigerate 24 hours for the best chewy-tender texture, then bring to room temperature to serve.
