Ingredients (makes about 6 popsicles)

Matcha layer

  • 1½ cups canned full-fat coconut milk (or whole milk)
  • 1/4 cup plain Greek yogurt
  • 2 scoops (2 servings) NeuroMatcha mushroom matcha drink mix
  • 3 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract

Vanilla cream layer

  • 1/2 cup canned full-fat coconut milk (or whole milk)
  • 1 tsp maple syrup or honey
  • 1/4 tsp vanilla extract

You'll also need: a 6-mold popsicle set and sticks.

Instructions

  1. Blend the matcha layer. In a blender (or with a whisk), combine all the matcha-layer ingredients until smooth and vibrant green — it dissolves instantly, no sifting or straining.
  2. Mix the cream layer. Stir together the vanilla cream-layer ingredients in a small cup.
  3. Fill the molds. Pour the matcha mixture into the molds, filling about three-quarters full. Spoon the vanilla cream on top for a two-tone look (or swirl gently with a toothpick).
  4. Add sticks. Insert the popsicle sticks.
  5. Freeze. Freeze until solid, at least 4–6 hours or overnight.
  6. Release. Run the molds under warm water for a few seconds to loosen, then pull out and enjoy.

Tips & variations

  • All-matcha pops: Skip the cream layer and just fill with the matcha base.
  • Dairy-free: Use coconut milk and a plant-based yogurt.
  • Strawberry swirl: Drop in a few diced strawberries before freezing.
  • Best timing: Lower caffeine per pop than a full latte, but still best as a daytime treat.
